Pumpkin Muffins

1 3/4 cups flour

2 eggs
1/2 cup sugar
3 tsp baking powder
Zest of 1 lemon
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp salt
1/4 tsp black pepper
1 cup pumpkin dip
1/2 cup buttermilk

1/4 cup vegetable oil

Mix all dry ingredients together in a large bowl. In another bowl mix eggs and wet ingredients. Add wet to dry and mix into a smooth batter. If too stiff add more buttermilk. If too wet add more flour. The consistency should be that of thick pancake batter. Grease two muffin trays and spoon batter in equally. Bake in a preheated oven at 400 degrees until done (about 20 minutes). Cool before serving.
